Who's tired of their boring breakfast? After being stuck inside going on week 2...or is it 3? What day is it? Who knows...


Well breakast by far has been the most boring for me. I get some toast, coffee and eat my toddlers leftovers.


I remembered this restaurant that I went to with a friend (back in the good old days when we could go out to eat) and for brunch, I ordered breakfast PIZZA! It was amazing. This is nowhere near as fancy as that was but hey I felt cool making it.


What to shop for:

Pizza Dough (Pillsbury makes an easy one I used, there are frozen ones and I think WholeFoods even has some premade ones as well... go knock yourself out if you want to make it from scratch too)

Frozen veggies (i used carrots and broccoli b/c they were leftovers in our fridge)

A meat (bacon or sausage are best in my humble opinion)

Eggs

Cheese


How to make it:

Follow the directions on making the dough. ( I also added some Flax Seed for extra health)

Once it's on the pan and in the pizza shape coat the top with some olive oil. Put on your toppings...ending with the cheese and don't do the eggs yet. I put on some Salt + Peppa, Garlic Powder, and Onion Powder too.

I stopped here put this in the oven (350 like normal peeps lol for manybe 20 mins) and did this part the night before.

When we woke up the next morning I took the half done pizza out of the fridge. Scrambled my eggs, dumped them on top and popped it in the oven again until the eggs were cooked.

Then we cut it up and ate it!


Enjoy! I think the only thing missing was either some Baily's in my coffee or a Mimosa.
