Yes, those veggies are from Costco's frozen section and yes that is a container of the most delicious sauce known to man...Chick-Fil-A sauce for my sweet potato fries.


Yes those veggies are from Costco's frozen section and yes that is a container of the most delicious sauce known to man...Chick-Fil-A sauce for my sweet potato fries.


So...really the only thing that you'll need to make is the sauce I poured and then baked on top of the chicken.


How to make:

Get Chicken (any style you want and can be fresh or frozen)

Frozen veggies (any kind you want I used frozen squash here)

I tossed in the french fries because they were left over and found some extra sauce to make sure I was "eating the rainbow"

In a blender combine:

Corn (frozen or in a can)

Milk

One chopped Jalapeno or Jalapeno flakes

Chopped Onion

Salt + Pepper


Now the Bottom three do to taste....don't like spice add less jalapeño. Salt + Pepper to what you like. Milk I added slowly to get the right texture...it should be like chunky cream corn. And as for how much corn...your guess is as good as mine I just opened the frozen bag and dumped some in.


I put it all on one pan and cooked the veggies in a little coconut oil, and smothered the chicken in the corn sauce. I baked it until the chicken was cooked...maybe 30 mins? probably at 350 because that's where my oven starts and usually I just hit GO.

It was easy....delish...and practice for a busy night or just stuck inside like we all are right now and want to change up the kind of chicken dish you are making.
