In wanting to support local businesses we got our groceries delivered from this awesome company #denverfoodbox. HUGE amounts of fresh produce, meats, and even lemonade were dropped on my porch <3


So off to the recipe books I went looking for things that would use the produce we got. I was honestly nervous not going to the grocery store with a "plan." How was I supposed to cook with what was in front of me and would it actually taste good?


I think this cookbook is now going to be my ULTIME fav. If you don't know about JuniorLeague cookbooks you are missing out. They are known for their amazing recipes and I cracked this baby open for the first time, and YET to be disappointed by something I have made (get the cookbook here).


What you need to shop for:

ground beef

red peppers

jalapeno (or jalapeno powder)

yellow onion

onion powder

garlic

cayanne pepper

1 egg

ketchup

bread crumbs

parm cheese


How to make it:

Dice the onion, pepper, and jalapeno. Melt some butter in a pan to cook the onion, pepper, and jalapeno. Add cayenne pepper, onion powder, and garlic to season. Stir for a bit add some salt and pepper. Set off to the side when the onion is translucent.


Put the ground beef in a bowl. Add some salt and pepper, onion powder and mix. Add in the peppers and onion mix from the pot. Stir in the 1 egg and 1/4 cup of Ketchup (although I didn't measure) Add some bread crumbs (again I didn't measure it says 1/4 cup) and parm cheese (can you ever have enough cheese?! don't worry about measurement here)


Mix it all up and put in a baking dish on 350 for 75-90 mins. I think mine was done around 60 so just keep an eye.


Side Dishes:

we did some salt + pepper with EVOO asparagus and small potatoes. All of it on the same pan and baked in the oven.


Literally this meatloaf is going to be the dish I bring all my pregnant families when their babies come home it was THAT GOOD. ZERO leftovers and now we are craving it.
